At Sholes Deli, we don't believe in rushing a good thing. True barbecue takes patience, sleepless nights, and an unyielding respect for the wood fire. We planted our roots in Mount Pritchard with a mission to bring world-class, competition-grade smoked meats and street-style Tex-Mex comfort food to Western Sydney.
We aren't your typical commercial kitchen. We operate on a strict, micro-batch smoke schedule from Thursday to Saturday. Why? Because premium brisket needs twelve to fourteen hours of meticulous temperature control, clean wood smoke, and an experienced pitmaster's eye to reach melt-in-your-mouth perfection. When you order from us, you're eating meat that was monitored around the clock just hours before hitting your plate.
From our signature hand-crafted Beef Chorizo sausages to our deep, rich Dipping Consomé Bovi — every sauce, rub, and side is made to elevate the natural flavour of the meat. We stack our boxes heavy, melt our cheese thick, and serve our tacos with the crispiness they deserve.
